Red Stag Hunting:
The southern region of New Zealand is famed for its dramatic, diverse landscapes and exceptional hunting heritage. Early British settlers introduced big game to create a true sportsman’s paradise—an environment that today offers some of the world’s finest stag hunting.
These massive red stags are pursued in expansive backcountry habitat rich with native vegetation, natural cover, and rugged canyons. The area provides all the excitement of wild, untamed terrain while remaining accessible by foot, four-wheel drive, or helicopter—whichever method you prefer.
With stags exceeding 1,000 SCI and antlers weighing over 25 kg, this hunt offers a once-in-a-lifetime opportunity. Because trophy preference is highly personal, the outfitter maintains a wide range of exceptional, heavy-beamed stags with impressive tine length and scoring potential.

Elk (Wapiti):
New Zealand’s elk, or wapiti, originate from the legendary Rocky Mountain bloodlines and have since evolved into some of the largest-bodied, largest-antlered elk found anywhere in the world. Hunters from across the globe travel here in pursuit of these extraordinary trophies.

Fallow Deer:
Private hunting areas host strong populations of palmated fallow bucks, offering fantastic opportunities during the April–May rut.
Though smaller in body size, fallow bucks are aggressive and highly competitive during the breeding season, providing an exciting and fast-paced hunt. Their antlers—ranging from pure white to chocolate, menil, and spotted—make them a standout trophy for any collector.
For an unparalleled tahr and chamois hunting experience, the outfitter recommends opting for a helicopter to access their hunting areas in the southern Alps. Budget approximately $1500-$2500 per animal, however, sharing the helicopter with fellow hunters can lower the individual expense. The helicopter is optional. They also offer foot hunting options for tahr and chamois private properties, this includes an additional landowner fee.
Himalayan Tahr & European Chamois:
This outfitter provides premium access to both Himalayan Tahr and European Chamois—two of New Zealand’s most coveted alpine species.
Himalayan Tahr:
High in the Southern Alps lives one of New Zealand’s premier big game trophies: the bull tahr. Often called the “king of the mountain,” tahr offer a challenging and rewarding alpine adventure.
While they can be hunted year-round, their peak rut occurs in May, June, and early July, when bulls carry their iconic long winter coats—just as prized as their horn length. Hunts may be conducted on foot, with spike camps, or helicopter-supported depending on your preference and desired adventure.
Chamois:
Introduced to New Zealand in 1907 as a gift from the Austrian Emperor, chamois have since become an exciting pursuit for both local and international hunters. Their prime hunting window mirrors the tahr rut, offering sleek black winter coats during May–July.
Chamois hunts can also be conducted on foot, from spike camps, or with helicopter access. Known for their alertness and agility, they promise a thrilling challenge against a backdrop of breathtaking mountain scenery.

Arapawa Ram & Feral Goat:
Arapawa rams and feral goats are excellent add-on hunts and ideal for youth or first-time hunters. Introduced by early European settlers in the 1800s, these species thrive in the region.
Arapawa rams are known for their dark coats and striking spiral horns, while feral goats—curious and fast-moving—present a fun and rewarding challenge for rifle or bowhunters alike.
Bird Hunting:
Waterfowl season runs from the first Saturday in May through the last Saturday in July. During this period, hunters can pursue mallards, greys, shovelers, paradise ducks, black swans, and Canada geese.
Bag limits include 50 mixed ducks and 5 black swans; Canada geese have no limit. Multiple hunting locations provide diverse shooting opportunities and varied bird behavior.
Fishing:
The South Island is widely regarded as a world-class fishing destination. From pristine lakes to alpine rivers and crystal-clear spring creeks, anglers will find endless opportunities.
Peak fly-fishing months run from November to April, with December bringing the renowned cicada hatches—an unforgettable experience for dedicated dry-fly anglers.
Small Game:

Stag/Fallow Deer/Elk: Late February through August for the main season; peak red stag roar occurs late March through late April. Velvet stag is November through January.

For hunts on private land with a contracted outfitter, permit/access process is handled by the outfitter. Big-game species like red stag, tahr and chamois do not require “tags” in the same way as in some other countries. The outfitter handles everything needed and these costs are included in the pricing.
